My wife and I have been eating fairly low-carb for several years. I chose this way of eating because I love the way I feel. My wife was almost forced into it due to grain intolerance. We both missed granola. We have tried every low-carb and grain-free granola we could get our hands on, but they all left us wanting. Most were too sweet. Some were chewy (not our thing). None had the right flavor profile for us.
So one day I decided I would try to make my own. I used to make my own granola back when I started most days with some sort of oats. I knew that toasted coconut, vanilla, and cinnamon were the keys to the flavor experience that I enjoyed. So I leaned into these with the first batch. I also didn’t go crazy with the honey, because as anyone who has been low-carb for a while knows, a little sweetness can go a long way. I also threw in a healthy portion of sesame seeds; hat tip to halva.
What came out of the oven was a delightful surprise. We knew we were on to something. So we tried again, and again, and again… We couldn’t stop making or eating the stuff. Soon our family got a taste and demanded we make it for them. Then our friends. And so the journey began.
Now we are proud to launch Pura Nola Grain-Free Granola. Cinnamon-Vanilla is the first flavor. We think it’s a hit. We will develop other flavors down the road, but we couldn’t wait to get this out into the world for others to enjoy.
